Healthier Mashed Potatoes
Mashed potatoes are a holiday staple but traditional recipes tend to be high in fat, sodium and calories. This version uses low fat sour cream and low-sodium vegetable broth to reduce the fat and salt content but preserve the creamy, rich flavor. And contrary to popular belief, potatoes are the healthiest “white carb” out there, providing fiber, vitamin C and antioxidants. You can also add in some boiled cauliflower for added nutrients. You won’t notice much of a difference in flavor. So feel free to indulge in your favorite side dish!

Ingredients
· 6 tablespoons sour cream or Greek yogurt
· 2 pounds yukon gold potatoes, peeled & cut into 2″ chunks
· 4 garlic cloves peeled and halved
· ½ cup low-fat sour cream
· ½ cup low sodium vegetable broth
· 2 tablespoon butter
· alt and pepper to taste
· Fresh herbs like thyme, chives or parsley for serving
Cooking Instructions
1. Bring a large pot of salted water to a boil. Place the diced potatoes and garlic inside the pot. Cook covered until the potatoes are tender, about 16-20 minutes.
2. Drain and the return the potatoes and garlic to the pan. Add the sour cream, vegetable broth and butter. Using a fork, masher or electric beaters, mash the potatoes until smooth or until your desired consistency. Season with salt and pepper to taste.
3. Serve warm and top with fresh herbs, if desired.
