Slimmed-Down Scalloped Potatoes

Scalloped potatoes are a classic holiday side dish but most recipes are very heavy in salt and saturated fat. This recipe lightens things up by simmering the potatoes in nonfat milk, then topping them with a creamy sauce made with reduced-fat sour cream. At only 187 calories per serving, you can indulge in this delicious dish without the guilt. Potatoes are surprisingly nutritious. They are an excellent source of complex carbohydrates, vitamin C, potassium, iron and vitamin B6. They also provide 3 grams of protein per serving. For those who are not lactose intolerant, it’s also good to incorporate non-fat dairy into your diet as it isa great source of protein, calcium, vitamin D and phosphorus.

Ingredients

· 3 cloves garlic, peeled

· 1 pound all-purpose potatoes, preferably Yukon Gold (about 3medium sized), peeled and sliced

· 2 cups nonfat milk

· ½ medium onion, finely chopped

· ½ teaspoon salt

· Pinch of ground nutmeg

· Finely ground pepper to taste

· ½ cup reduced-fat sour cream

· 2 tablespoons freshly grated Parmesan cheese

Cooking Instructions

1. Cut 1 garlic clove in half and rub over the inside of a shallow 2-quart baking or gratin dish. Coat the dish with cooking spray. Preheat broiler.

2. Mince the remaining 2 garlic cloves. Combine with potatoes, milk, onion, salt, nutmeg and pepper in a medium heavy saucepan. Bring to a simmer over low heat, stirring occasionally. Simmer until the potatoes are tender, about 10 minutes. Transfer the potatoes to the prepared dish with a slotted spoon.

3. Transfer ¼ cup of the milk mixture to a small bowl; whisk in the sour cream. Pour the remaining mixture over the potatoes. Top with Parmesan. Spoon the sour cream mixture evenly over the potatoes. Broil until golden brown, about 3-4 minutes. Serve immediately.
